Actually you can get sodium acetate cheaply(By that I mean FREE)
By mixing Baking Soda and Vinegar, you get these products:
Water
Carbon Dioxide
and Sodium Acetate
If you let the water boil off, you can get pure sodium acetate. The CO2 is gone from the reaction.

then melting the crystals, google it
